Our Wagyu cattle have been on feed for over 500 days, they are F1 and F2 crosses (Wagyu and Holstein), they will average 1300-1400 pounds live weight. The Holstein’s are much like a Wagyu, they have the same intramuscular fat cells (marbling). No bones, or soup bones are offered at processing on these cattle.
Wagyu is a Japanese beef cattle breed derived from native Asian cattle. ‘Wagyu’ refers to all Japanese beef cattle, where ‘Wa’ means Japanese and ‘gyu’ means cow. Wagyu were originally draft animals used in agriculture, and were selected for their physical endurance. This selection favored animals with more intramuscular fat cells – marbling – which provided a readily available energy source. Wagyu are naturally horned and can be either black or red in color.
